Introduction
For many years I treated furbearer meat the same as most other trappers -- to be discarded or, at times, to be used as trapline bait. Oh, once in awhile I might keep a young raccoon, but practically all of the meat was wasted. Then one day a trapping partner talked me into trying fried beaver. I was hooked! I could hardly believe that beaver tasted so good. As a result of that, for the past ten years I have been collecting and trying game recipes, adding or subtracting as I experimented until each recipe seemed just right. I do have favorites and there are a few game animals with meat that I don't care for, but, for the most part, I have found that all wild game meat is tasty. Instead of discarding your furbearers, try cooking them. You will have a lot of good inexpensive eating.
In addition to the furbearer recipes, I have collected and presented to you a number of ways to prepare both small and big game. Most trappers are also hunters. You will have your own favorites, but I urge you to also try the meat in the various recipes in this book.
